I want to know with these specs can I play MOST modern games such as Watch Dogs, The Sims 4, etc..

What would be the reason for / cause for it to be ran on low?

New games like Watchdogs look very good on low.

I put Wolfenstein down to low for LOLz, and I could barely tell the difference between that and Ulta (with everything maxed out). Both were at 1080p. You'll be fine.
 


Because watch dogs apparently requires 4 titans in SLI and a 64 core 9ghz processor to run on recommended settings...

...well, maybe not that much, but it is apparently a lot. As I said, it's not even out yet though so you may find it runs just fine on medium or better with your setup.
 




Nothing, once you put in the 265x your APU just becomes a CPU :)

No need to disable IGP in BIOS either, it just happens
