Given that I have a Rosewill Stallion Series RD500-2DB 500W PSU, what would be the best possible GPU I could upgrade to? Yes, I know I should probably buy a better quality PSU, but first I'd like to know what's the absolute best GPU I can get by using whilst keeping the same PSU.

Right now, I have a XFX Radeon HD 7750 1GB GDDR5 installed and it runs without a hitch.

Personally, I would be very hesitant to upgrade my video above what you have now. Your PSU has approx. 30amps on the two COMBINED 12v rails; only ~15amps per rail. There is some loss of power when the two are combined AND the unit is only rated to 25C, while inside your case it will probably get to 40-50C; the unit will heat up and the power will drop.
AMD Radeon recommends only 16amps. Minimum for the entire system for that card so you are safe. Plus that's a pretty nice card.
One more observation; If it ain't broke, don't fix it.

A newer video card will not help much with multiplayer FPS or MMORPGs due to lag.

I have a XFX 550 and Antec HCG 620 both running r7 260x which is just an overclocked version of the HD 7790 since I am waiting for video cards to drop in price but I don't really game much.
