I'm planning on buying a new case for my computer (as well as some other case accessories), and in this process I would like to switch around my Hard Drive situation. I have a desktop, and two laptops, one of which I never use anymore and it has a 120GB SSD (Windows 8.1) inside. My desktop has a 1TB HDD w/ Windows 7. I also have a spare internal 500GB HDD here.

So, my plan is to backup all the files I want (steam games, music, programs) to the 500GB and then put the SSD into my new desktop. I will then install both internal drives (1TB and 500GB) into the new case as well, and format the 1TB. I'll use that drive for extra storage for Steam and Music. Then I'll take the files off of the 500GB and obviously put them on either the 1TB or the SSD. I may or may not keep the third HDD installed for a backup drive but that shouldn't matter I don't think.

It all seems to easy, and I feel like I might be forgetting something so I wanted to ask the community before I make this big jump. I'd rather not lose all my data because of a stupid mistake. If you need any more info just ask, and prior thanks for any help.

Your windows 8.1 ssd will not boot with a different motherboard.
and... since it was oem, and tied to the laptop, you may not be able to activate using a different motherboard.

If the contents of the 1tb drive can be held on the ssd, you could clone the os to the ssd and go from there.

If need be, buy a new copy of windows 8.i to install on the ssd.
Your programs will need to be reinstalled, but everything else will still be on the 1tb when you attach it to the pc.

To preserve your settings and files, export them using windows easy transfer. Then import all or some back after the new os is installed.

I knew I forgot something, and it was that oem software is tied to the motherboard. I'm not gonna clone from HDD -> SSD as that's a bad idea, but I suppose I'll buy a new copy of Windows 8. oh well. thanks!
