I've searched quite a bit and there are tons of gaming rig builds, but I'm looking for some recommendations on a 1080p video/photo editing desktop I don't plan on running ANY games on. I would like to avoid graphics card due to cost. I want to run Adobe Elements 12 and be able to handle GOPRO 1080p. My current X200 thinkpad is not up to the task! I am leaning towards an LGA1150 setup. Last time I built a computer it included a ti4200 series graphic card to give you and idea how long ago it was! Budget is around $500 total (already have monitor/key/mouse) Thanks for the help!

When it comes to editing video, there is only really one way to bypass a GPU: dump more money into a beefy CPU (i7, i5, etc.).
My only suggestion would be to stick with a decent i3, and invest a lot in 8GB of RAM at a minimum.
