Multiple Monitors without Surround

Hello,
I am looking into getting 2 more monitors to add to my rig.
Currently, I have a GTX 560 TI running my monitor, and I have a GT 630 that I had lying around installed in case I needed VGA port for anything. However, if I were to add two more monitors, from what I know, only 2 can be run off a 560 ti. I don't mind running the 630 all the time for a third monitor, but I had a couple of questions about it.

I have already read that 3 monitors with 2 different cards works fine, but you cannot use surround.
Is it possible to run a game and manually set the resolution to 4800x900 and if so, will it work over all the monitors (I don't mind windowed mode if thats needed, the games are BF4, War Thunder and Source games). Secondly, is a 4x PCIE slot sufficient to run one or two monitors at 1600x900 each?

I could be wrong, but I thought the game would be processed on the 560 ti, then the info would be sent via PCIE to the 630 for it to draw on the screen. I would have thought it would be similar to a game being on half of two screens I think you can have a game running and it would stay on one GPU. Eg, If I had BF4 open, and then put it half each on two monitors, each monitor powered by different GPUs, you wouldn't have one half of the game lagging while the other is limited by V Sync (At least not to my knowledge).

I do understand though that I am going to need to lower graphics settings to keep up at that res.
