I know you said one 780 ti would be fine, but I'm most likely going to get 1 or 2 more 1440p monitors later on.

That's perfect!
As i said before a single 780Ti would max out very game which have good optimization and too even at 1440p and beyond. But you said that you would add another monitor later, if it is so then two 780Ti's would be perfect.
