Looking for advice on a new system

I recently rebuilt my old desktop computer with help from this forum and now I have a close friend who wants me to rebuild his old machine for him.

His computer case is the same as mine
-Antec Nine Hundred Black Steel ATX Mid Tower
All of the other components I'm thinking we should replace.
Motherboard, CPU, video card, RAM, Hard drive, Operating system

Currently he has 3 large wide screen monitors setup so his desktop is extended across all of them using a 4 x mini display-port graphics card. At one point he also had a Flat screen TV hooked up (Which will be needed again in the future). I don't want to mess with that configuration since it's seemed to work well for him.

I would like to find a video card with 4 of those ports and that's compatible with the MB I end up going with. He is not a gamer but does have a good amount of money to spend on rebuilding this computer. I told him all the parts would most likely cost over $1000 and I got the thumbs up.

MB - ?
CPU - i5 or i7?
Video Card - 4 x Mini display port
Ram - 8GB?
Hard drive - 256GB or 512GB SSD?
OS - windows 8.1

that's good to know. as long as all 3 monitors can be hooked up and not a lot of configuration needed I'm sure it would be okay.

I put everything together last night and it's lightning fast. Had no issues with the video card. All three monitors showed up after the first reboot. I didn't have to touch the video settings at all. I added classic shell to bring the old windows 7 start menu back since he doesn't have any touchscreen monitors.
