Of course the xeon e5 2697 v2 is overkill for anything you'd like to do... But, in terms of gaming (when paired up with a gtx 780 ti) would I get more fps with that cpu or a i7 4960x?

I've heard that the xeon is mainly a server processor so it wouldn't work as well with games. Is this true? (BTW money is not a problem so please don't worry about that...)

I have always been in that camp that Xeon was a server / workstation processor. The truth is that it is pretty much a Haswell without the OCing capabilites. If I had my druthers ( and the budget ), I would go with the i7 4960x. With the 780Ti it should deliver all that you want in gaming. One thing to keep in mind, as the Xeon is primarily used in servers, they tend to be pretty rugged. Just a thought.

So from what you know, I would probably get better fps with the xeon because it's a stronger cpu, correct?

Servers are heavy use machines, and thus you need components to stand to that use. Dosn't make it stronger, just more durable. Some games rely on more CPU ( at least the older ones ) and others GPU, but I think the GPU is the important thing these days. As another poster mentioned, you can do quite well with an i5 4670 and a good GPU such as the 780Ti. Heck., I think most would be quite happy with an i5 4670 & GTX 770. Cheaper but very effective for gaming. Getting back to your orignal question, my choice would the i7 4960x, but then that is my personal choice and doesn't mean that the Xeon would be a bad choice.
