I'm going for the maximum performance available and I don't care what it costs. All my Googling has brought me back to the 1TB Samsung 840EVO. If this is indeed the fastest drive currently available, I want to take it a step further...

I want to install 2 SSD's into a MacBook pro using and optical drive caddy. My question is: Can I install 2 SSD's in a RAID stripe array?

SSD's are better left alone. Raid doesn't improve speed appreciably.

Yeah i7Baby is right, it will actually slow down the random read/write speed. Plus really you're going to be bottle-necked by your CPU in a lot of cases, (well mainly in game load times)
