POE switch or switches for cameras

I'm building my network for security, backup, and entertainment. I was hoping the TH community could help me out. I'm trying to get as many internet using devises as possible to use wired network, ie smart tvs, game consoles, and desktop computers. So I wired my house with 8 Ethernet outlets and I also wired it for up to 6 POE cameras (but I would be fine with using 4 right now). So there are 14 (would be fine with only 12 hooked up) outlets that end in my office. I have 2 computers and a printer plugged into my router right now and will be building an NAS for the cameras, and storage backups. I'm new to using switches, but my research is showing POE switches are more expensive. My questions are:
Should I only use 1 big switch for everything, or 2 to save money on 1 small POE switch and a medium sized regular switch?
Do the switch or switches need to be managed?
Will the NAS need to be plugged into the router to be able to be used by the whole network or can it be plugged into 1 of the switches?
Any specialty part advise about building an NAS for this type of network would be helful too.
