GTX TITAN Z in SLI would be the best GPU setup you could get. (pun)

Without bottlenecking? Well, you will have to settle for something like a R7 250x/260X/265 or GTX 650 TI/ 650 TI boost/ 750/ 750 TI. All of these GPUs will be able to handle the latest games at 1080p, the settings you will be able to play at of course depends on the game. The latest AAA titles will obviously not run at the highest settings, don't expect too much.

I would myself go for either a 750 or 750 ti, great performance and power effiency with the new Maxwell architecture, which leaves the other GPUs in the dust.

I wouldn't go above a GTX 750ti, HD 7850, or a R7 265, if wanting to avoid bottlenecking. You could go with an R9 270/270x if the price is close enough. It will be a bit faster, but you will have some bottleneck. If your power supply isn't stellar, but at least 300-350w, I would stick with the GTX 750ti.
