G sync monitors just makes sure all your games is running smooth with no tearing at the monitor refresh rate if your gpu can drive it.
Tearing is the graphics on the screen is when one or more frame overlaps each other. Example when you see an object that was in the last frame that is still there on the next frame.
Normally we use Vsync to lock frames at 60 fps to match 60Hertz. However there is a problem as when your frame per second dips below 60 for any moment, the frame is drawn twice or more so you will perceive a stutter effect on the screen Vsync can have input lag as well which can affect your gaming.

It basically have a dynamic Vsync that automatically adjusts for you to reduce tearing,stuttering and lag. Example if your fps drops to 55, the monitor would adjust its hertz to 55 to reduce any problems and automatically goes back to 60. It just keeps the gpu and monitors in sync in drawing frames.
