Best Posible GPU config for 3x2560x1440

I am looking to get 3 QNIX 32" Monitors, however I am not sure if I should go XFire/SLI, I want to know what is best performance wise, $ wise not an issue at the moment, I am looking performance only:

Option 1: 1 GPU Radeon R9 295x2
Option 2: 2 GPU Radeon R9 295x2 Crosfire
Option 3: 3 GPU GeForce 780 Ti Dual Classified

My Gaming in FPS and Flight Sims, Video Recording/Editing Sony Vegas, and my goal is to get no less than 50-60 FPS @ 3x2560x1440, thanks in advance for your opinion, and feel free to suggest anything.

I just don't recommend using 2 295s. the drivers for 4 way crossfire or sli just suck. 780ti right now only come in 3g which wont be enough. you will have terrible lag because v ram does not stack. even if you have 3 card you will only have 3 g of v ram. You need 6 minimum. there is a 12g titan but they are 3k each :/ now that I have looked over it despite the the driver issues i think 2 295s might be your best option. I'd say buy 1, see if it will suffice and if to doesn't get another. that or get 2 titans but that would be a more expensive route.

When you say 4way crossfire you mean Quad Crossfire Config with the R9 295x2 (2 cards)? What about just one Radeon R9 295x2? What about also the 780 Ti in 3way SLI? Definitely just 1 780 Ti won't be enough at all, but only 2 with Vision Surround I don't think would be sufficient either, but I can be mistaken.
