GTX 760 SLI vs. ?

I currently have two EVGA GTX 760 2gb cards in SLI and want to change that to a single high-end GPU with better performance and higher VRAM. My budget is $500, I also want to mod the heck out of Skyrim with many Hi-Res texture mods and still get high FPS (60-80). Or is the 760 in SLI better than anything I can buy in my budget?

My specs,
CPU: AMD Phenom x4 965 (black edition)
RAM: Corsair Vengeance 8gb 1600 MHz
Motherboard: Gigabyte GA-UD3-990FXA rev. 4
PSU: Corsair AX760
SSD: Intel 240gb
HDD: Seagate Barracuda 500gb
GPU: 2x GTX 760s in SLI (hopefully going to be replacing)

That's what I'm thinking now lol, what would be best in the fx series?
Actually what is the best possible processor for the AM3+ socket?

You could technically run the 9370 on that board, but you won't really have room to overclock. Your most cost efficient buy would be to go with the 8350($175) and stock cooler with stock speeds, or go with the 8320+hyper 212 EVO($170) and overclock beyond the 8350.

Or, you could spend the cash and go with an Intel E3-1230v3(locked 4770 for $50 less) and a compatible z87/z97 motherboard with SLI support for $350-$400 and obliterate the FX series.

Well I already have a corsair h60i so I might grab that 8320 and overclock or just go with the 9370.
I wanted Intel initially but now I have to buy a whole motherboard on top of a processor lol. Still Intel knows what they are doing. I'll have to think about it. Thanks Trainwreck for the feedback :D
