My SSD is the only thing I have currently set for boot in my UEFI BIOS. Everything else is disabled (ODD and HDD). Oddly enough, I hear my HDD spinning up when I turn on my PC. I don't know why this is, but it happens. I assume this is attributing to my extremely slow boot times for an SSD. I get a boot time of about ~30s, which is about triple the time of most SSDs. I have Windows 7 Ultimate 64 bit SP1 installed, if you wanted to know (I know Win7 boots slightly slower than Win8).
My HDD randomly turns on while I'm in Windows. I expected the HDD to stay on all the time while in Windows, but at completely random times I can hear the HDD turn on, it's the same sound it makes when I turn on my PC.
