Why is that?

If I get 5.1 speakers will they work with the 7.1 card?
And I never really understood the connectors for sound cards. These ones in the links that have the gold looking connectors, what are they for? Can I use my regular 3.5 mm headsets on them? And I asked this before but didn't really get an understandable answer. If I buy say 5.1/7.1 headsets pretty much all are USB. I want to get a soundcard to reduce stress on my CPU. Now I know USB headsets have their own soundcard BUT the CPU still processes all the sound. So my question is if I got a USB to 3.5 mm converter and plug that converter into the soundcard. Will that still give me 5.1/7.1 quality AND no stress on my CPU?

With the 7.1 cards you are getting 100dB and 106 dB signal to noise ratio, while the Z series gives you 116 dB SNR.
Simply put the Z is the better card with superior audio.

5.1 speakers will work on a 7.1 system, but you will be lacking wither side or rear speakers and be limited to 5.1 playback.

Most headphones only simulate 5.1 or 7.1 sound because of the limitations of the speakers in the headsets. I believe that there are some true 5.1 headsets out there, but they are ridiculously expensive and virtually undetectable from normal 2 speaker quality headsets.

The sound card will eliminate the sound processing by the native chipset on the motherboard, and reduce (but not eliminate) the processing load on the CPU. A USB converter will have little or no effect on the CPU, but most of the processing will take place by the sound card.

So using a USB converter will work for me then? Sorry I think I understand that part, you're saying if I use a USB converterthen quality will be good, and sound card WILL process? Correct? And are there any particular 5.1 speakers you would recommend? I'll need one with good size wires
