Would this card in a 2-way SLI be better than a 780 6gb for three monitor Nvidia Surround?

depends assuming your talking 1080p montiors yes if your talking 1440p neither that nor a 780 woudl have enough power to drive it

2gb you will run out of vram with triple 1080p monitors assuming you run the detail levels and aa higher. AA especially. I would look for a 3gb card at least personally.

you should be fine as long as you dont go crazy with the texture qwuailty and no it will still be 2gb
