Messed up bigtime with my motherboard

I broke the piece that covers the ports connected to the MB that go out the back. Can I safely operate without or do I need to call Gigabyte and get a new one?

Are you referring to the I/O backplate? Yes, it is generally safe to go without, BUT you will have two concerns. The least of them, but you will have it, is dust. Especially if most of your fans are exhaust, air coming in around those ports will bring dust with it, so be sure to clean that area from time to time.
A less likely but possibly more problematic issue is static / grounding. The I/O plate has little "fingers" on it that ground all those connectors, by a shorter and less-resistance path than going through the mobo. If you have problems of restarts or crashes when / if you plug something in while the system is operating, you know you have a problem.
