They already do. Crysis 3 1440p on max settings goes over that. Don't worry, you won't be left out by having 16 gigs of ram, devs always eventually find a way to provide an excuse for you to go shopping for more RAM.

Programmers are more and more exploiting DRAM so the continual rise in use of it is to be expected - a good case in point is to look at how many people ever get a 32bit OS anymore, or look at prebuilt computers, which are continually chintzy with DRAM, it's uncommon to find one with less that 6GB of DRAM these days, (which bears out the chintzy point, mixing a 4GB and a 2 GB stick leaves you with 4GB running in dual channel and 2 in single channel)
