What problems might Interfere when transferring files from an hdd to an ssd using the corsair force 3 notebook upgrade kit?

I KNOW THIS IS LONG BUT I WOULD MUCH APPRECIATE IT IF SOMEBODY HELPED. :(

So I have two options with my new computer build this summer.
1st option:
-Getting windows 8.1
-One 256GB ADATA SSD with 480mb read/write
-An extra 250GBHDD from my old computer with some files on it and an OS (whoch I may run into some problems installing as well having two OSs on two drives.

OR the second option is to use the same amount of money and get a corsair force 3 notebook upgrade kit (which I will use on my desktop) which will deny my option of getting windows 8.1 but allow me to keep Windows 7 Ultimate from my old drive with the whole Microsoft Office 2010 Suite.
The only problem with the second option is that my OS on the old drive is a 32-bit version. Does that mean I will get a 32-bit Windows 7 Ultimate on my new 64-bit compatible computer? Or can I upgrade without a hassle if so? If I do merge the files and OS I will keep a blank extra HDD for other files.
I do get one advantage though on the second option: Faster read/writes by 40-70 mb and windows 7 Ultimate with Microsoft Office 2010 (These things have great value and costed above 100 dollars each)

Give me a solution PLEASE to choose from the first or second option.

You're getting/building a new PC. It deserves/requires its own OS.

Get 8.1 for the new machine.
Install on whatever drive you want.
Once everything is actually running, connect the old drive from the old PC and copy over any files you need.
Install whatever applications you want on the new PC (MS Office, etc)

Can I bring Microsoft Office 2010 to my new pc? If so, how? I've tried it before and I was not able to.
Also, I am not sure about Windows 8.1 because it seems a bit complicated if anybody but me will use it and that I can't be sure about the features of Windows 7 ultimate. Is it really worth it going for the 1st option?
IT'S SO HARD TO CHOOSE!!

Assuming you still have the install media and the license key, simply reinstall it.

I may feel a bit guilty for this, but I don't have the license key for Office 2010 because my dad's friend gave it to me for free when he was working at a computer repair shop. I am not sure if it has been illegally downloaded or not, but I just don't have the key. For Windows 7 however, I do.

Belarc Advisor can probably retrieve the activation key. If it is in fact a valid install.

Yeah I have that already, I forgot about it but the problem is the last time when I was trying to find the license key for my windows 8 laptop and I use belarc acvisor, the product key was wrong (I was going to upgrade to 8.1.
