The official recommended PSU for this card is 750w, is that really necesary? Does this card really draw that much power? I'm running OCZ ZS 750w at the moment and I'm wondering if I would have some head room to OC this card without running into issues?

So who makes your power supply and what is the 12 volt rail amps? Is it a single or multi rail affair?
How old is it? what was the last graphics card it ran? Yes, its likely the recommmendation is within 50 watts on big cards. Answers on a post card please.

It should be 31A on the 12V rail and 550W in total - minimum.

OCZ psu's aren't real good, maybe that's why 750W was recommended - so it doesn't get stressed.

I would've got an XFX 550, Corsair HX650 or Antec HCG 620M for it
