I have a 4k TV with HDMI input in the same room as my rig. I want to have my rig output to the TV and to a main 2560x1440 display. I would like to be able to switch between the displays and possibly have them both on at the same time. I understand that I cant really push both the displays with heavy graphics but I want to know if a single high end card like a 780 will be able to at least push both displays at the same time. If that will not work, is there an app or piece of hardware that switches displays without having to unplug one and plug in the other?

None of the nvidia's card (High or Low ) will able to provide multi display as AMD's Hydra vision and Eye infinity is the most proved multi display tech in the graphics card market . Hence by a Radeon 7990 HD or R series card and I am sure you can do anything with that.

If all you want is multi-display output without regard for 3D performance (at least not on more than one screen at a time), almost any current GPU will do that but the displays can only be attached to HDMI or DisplayPort ports. If both of your displays only have HDMI and your GPU only has one HDMI port but does have DP ports, you will have to get a DP-to-HDMI adapter for the second display.

If your GPU does not have those outputs - or not ones supporting 4k over s single HDMI or DP cable, you need a newer GPU and possibly newer cables.
