The i5 is the overall better chip. I typically prefer AMD but I really cant deny the sucess Intel has had with the Core i3/i5i7 family.
I dont know which website you are using but typically the FX8350 goes for about $189 and a low end i5 goes for about $185-190.
you can also go with an Xeon E3-1230v3 which is an i7 without the intergrated graphics, you have a dedicated graphics card so that wont be an issue. Granted an E3-1230 is typically $250 but as Icaraeus mentioned, you can get away with 16GB of RAM. and you can always add more RAM much easier then you can upgrade your CPU.
Sticking with 16 gigs of RAM and only one Graphics card should save you enough money to invest in an i5 or e3-1230.

The HD6970 seems to have plenty of bite...

Upgrading RAM is unnecessary unless you need it. You can have all the RAM in the world but if nothing uses it the RAM goes to waste. You should stick with an AMD 8320, or if you can go with an Intel Core i5. Crossfiring GPUs isn't really good. There are problems to be had if you do that.

The Intel chips use much less power then the AMD counterparts. the FX8350 clocks in at 125w and I think the E3-1230 is 84w maybe.
