so i currently have the gtx 780 3gb superclocked acx edition and was wondering if i brought the gtx 780 6gb superclocked acx edition would they sli with each other ?

No, for SLI they must be the same GPU architecture (check) and same size/type VRAM (nope) I really wish Nvidia would be as lax back as ATI is with crossfireX
