To upgrade to Windows 8.1 would I have to wipe both my SSD and HDD?

I am currently running Windows 7 and boot it off a solid state drive and was thinking to upgrade. If I want to upgrade, would I have to wipe both hard drives, or just the SSD?

You can go to microsoft and download the upgrade assistance for your OS http://windows.microsoft.com/en-us/windows-8/upgrade-from-windows-7-tutorial . Keep in mind the drivers you currently have might be for windows 7 only and best to download drivers for windows 8 in advance just in case there's incompatibility issues with your hardware.

Usually i format and do a fresh install so there's no conflicts with the files or uses up space on my hard drive just in case i change my mind to revert. Not sure if windows 8 will let you switch back but someone else might know

No you don't need to format and if you passed all the tests for the windows upgrade assistance it should start creating a restore point backing up your files before the upgrade starts if you wish to proceed. But if theres an error it reverts back and lets you know what caused the problem. But i would create a restore point first to be safe
