Wich one is better? SLI or Crossfire?

Even the stock/reference GTX 780 Ti is considerably faster than the best MSI 290X Lightning. The Lightning is also a triple slot cooler, so you won't have much room to Crossfire. The Gigabyte GHz is pretty much the fastest single GPU video card out of the box you can buy. SLI is and has always been better than Crossfire for several reasons, but the bottom line is that Nvidia has much better dual GPU driver support.

Looking at the review from TechPowerUp, the stock/reference GTX 780 Ti is better than the 290X Lighting in all categories: overall performance, fan noise, power consumption, performance per watt, performance per dollar, etc. The Gigabyte GHz would be an improvement over the reference GTX 780 Ti in all aspects. In the conclusion, TechPowerUp notes:

"Unless you are a hardcore overclockers who is gonna rip apart the card anyway, you'd be much better off with a custom-design GTX 780 Ti that'd be faster, cooler, and quieter."

There's even a video of the fans, of which they note: "peaking at over 2100 RPM, which is certainly not a quiet experience".

Do not forget that Nvidia is using the old variant to connect gpus. The 290s and all the newer amd cards on the other hand are using the xmda interface which makes the sli/ crossfirecable obsolete and give you microstutter free gaming experience. (Due to not being limited by a sli/crossfire cable, instead the cards communicate via the pcie bus)

I wouldn't bother with either.

The 290X Lightning is for high-end overclocking, LN2 mainly. The 780 Ti GHz Edition has many reported cases of struggling to maintain stability at stock clocks.

I'd definitely say go for a 780 Ti, but MSI or EVGA would be a better choice.
