1. How should this build perform? Can I expect an average 60fps ultra on most games?

2. What games can't I max out with 60fps? (Crysis 3?)

1. this build will definitely get ultra 60+ fps on all current games. Even crysis 3 gets 60.5 fps at stock clock speed. Only problem is un-optimised things like watch dogs.
HOWEVER if you're planning to overclock both CPU and GPU then I would definitely recommend may be water cooling or getting a different case. 3 fan slots for air flow may have difficult with all this overclocking and AMD heat. (could be wrong, but its gut instinct.
