Yes, it is a decent motherboard. I'd recommend you to get a kit of 2x4GBs ram instead of a single 8GBs stick so you can make use of dual channel.

Looks good. You don't need thermal paste. The stock cooler will already have thermal paste on it. And get 2x4GB (dual channel).

Seems fine, if you are not doing any overclocking (chipset doesnt allow it). I would recommed getting two 4gb ram sticks to allow dual channel mode.

Unfortunately I already bought the ram I was thinking of getting a second 8gb stick but later on in life but would two 8gb of ram allow dual channel?

Yes; assuming they work. The issue with buying them individually is that they may not work in plug n play so you may end up tweaking them. When you buy them in 2x8GB configuration, then they are designed to work in dual channel.
