My last PSU died which was a 500, so im looking for a new one, maybe the 500w wasnt enough maybe?

Graphics : Gigabyte AMD Radeon 7870 2gb with a possible SLI later on ( adding another card )

CPU : CORE I5-3570K (6M CA, 3.40 GHZ)

Mobo : GIGABYTE GA-Z77-DS3H LGA 1155 Intel Z77 HDMI SATA 6Gb/s USB 3.0 ATX Intel Motherboard

Harddrive : 500 GB

SSD : plan on getting one

RAM : 8GB

I'm looking the most I can get for the least amount of money.

Five hundred watts is enough, but you need to make sure the quality is there. Seasonic does not seem able to make a bad PSU, so anything they make (their own, XFX, some Antec) would be good. Delta (some Antec) and Superflower (Rosewill Capstone) are also excellent choices.

Must have been the cheap CX series. The secondary capacitors were cheap ones. But it is unusual that it damaged other components. They are known to die early but not known for taking other components with them.
