New to Multi-Monitor - Help?

Hey guys I was planning on building a pc to run on 3 monitors but I'm new to using any multi-monitor technology at all. I plan on learning how to use eyefinity or anything that I would need to learn to get this build running but heres my problem.

Although multi-monitor is great for Sims and game of that sort I also play FPS games and I was wondering if theres a way to play Sims with the multi-monitor tech then when I play things like battlefield keep the whole game on a single display

EDIT: Not sure if its obvious but when I say Sims I mean Simulators not the Sims game series

Hmm it's not on the fps I play( bf4, titanfall, crysis, thief etc) , you get additional field of view, not just stretched. But you have to use eyefinity.
To use single screen, disable the eyefinity group and switch off 2 outer monitors.

So its definitely doable? And because the view you get on two side monitors from FPS games are just that side stretched out over a 23in screen when the real size shoulld be max 3-5in on a single monitor so it gets me dizzy and i lose focus
