I already know quite a bit about CPUs and GPUs, and I know enough about the rest of hardware to be able to pick compatible and reliable parts out, but I'd like to know the ins and outs of the hardware on motherboards, and there's no better place to do that than on the forums of a hardware website, and I might as well do it in a way that allows other people to benefit from it in the future. So, my first question is: What are the major differences between different chipsets? i.e. Z87 vs. Z97 or 970 vs. 990FX

Solution
Big difference is that z87 and z97 are newer and z97 supports m.2 SSDs and more technologies. 970 and 990FX are amd's chipsets, and are older than z97 and z87.

difference between z87 and z97 is that z97 supports natively haswell refresh and the only chipset to support the new devils canyon cpus.

The difference between 970 and 990FX I don't know.

Features. Beyond that mobos of the same chipset is quality, different ports, vrm, etc., still features. There isn't a performance difference beyond things like pcie lanes available per slot or pcie/sata/usb version, which is again, features. So it's really pick a good quality mobo that has the features you want.

There's more to motherboards than just the chipset. There are other things that can differentiate different motherboards. Such as power phases, that allow you to basically get more power to your processor which is very important for processors with a lot of cores and/or overclocking. Also, there are the features that are given by each motherboard. Some have more pci slots, some have more sata ports, some have more safety features. You just gotta do your research and look to find which motherboard has the feature and amount of overclocking you desire for your price.
