4x2 vs 8x1 ram stick

Not very likely, but if you machine supports dual channel you should probably just go with the 4x2. Mainly it would probably be more impactful to memory intesnive tasks like if you were playing around in Adobe After Effects or something, but just to ensure the best performance you want to stick with the fastest configuration you support.

The 2x4GB can run dual channel which can provide upwards to a 10-15% performance increase from the DRAM itself, it doesn't double the bandwidth, the sticks still run at the same freq, but instead of being seen as a single 64bit device the DRAM is treated as a single 128bit device

I had the same problem that you have now.
Finally I took the 1x8GB
Simply because I have only 2 spots for RAM on my MOBO so If I will take 2x4 I wouldn't be able to upgrade the RAM later.
