Hey, I'm building a gaming pc and I was going to buy only one 780 Ti and a 750 Ti for PhysX, but recently I gained more interest in higher resolution gameplay so I'm considering getting a second GPU.

But you think I could use the three cards on an Asus Sabertooth z87? (z97 mobos and processors won't arrive in my country until later this year so I'm stuck with z87 at the moment). As far as I know it has only two 2 PCI-E 3.0 and one 2.0

The other important specs are:

Core i7 4770K
32gb of ram (I'll use it as workstation as well)
Corsair AX 860 if only a single 780 Ti and 1200 if two.

Expansion Slots
PCI Express 3.0 x16 2(x16 or dual x8)
PCI Express 2.0 x16 1(running at x4)
PCI Express x1 3

I wouldn't do more that 2-way SLI the third would be bottlenecked by the mobo at x4.
Please select a best answer, thanks!

Sorry but I think you didn't get my question.
I know I can't run a 3-way SLI on the Sabertooth z87, my question was if could use a 750 Ti on the last PCI-E 2.0 x4 as a dedicated PhysX card

I wouldn't do it. Your 780ti in sli will be more than enough for calculating Physx, even when playing games on higher resolutions. You can also let the cpu do the Physx. If you're still concerned about it, buy the 780ti first. You can always add the Physx card later.
