Getting the FPS of gameplay

I've read on different websites and heard on different youtube videos that people get absurd frames per second.
For example, there's a youtuber I watched who ran battlefield 4 on one monitor with 2 780ti's and claimed he was getting like 160fps.
How are these people measuring these framerates?! Considering the max refresh monitors I have seen are like 144Hz?

They usually use fraps to see how many FPS they have but there are many other software that can do this.
About that youtuber, If you have a 144Hz monitor but the game says you have more than 144 FPS, then you're actually looking at 144FPS on your monitor
