EVGA GTX 780 3GB vs Sapphire Radeon R9 290 Vapor X 4GB

Really comes down to what you are doing. Game wise, they trade blows. Some games simply run better on the 780, while others kick-ass on the R9 290. If you plan on only doing games, I'd recommend the 780. If you plan on doing other things that are GPU intensive as well, then go the R9 290.
Also, if you plan on buying a second card later or running multible monitors, go with the R9 290 for the extra GB of VRAM.

Cost is also an important factor so if the performance in all of your daily related tasks are relatively equal from both cards, then just get the cheaper card.

Well, I'm going to play games and record them, edit and stuff. So should I go with the 290 then?

I would for the extra 1GB of VRAM, leaves you options for the future. Also the 290 is powerful in other computing applications as well, such as video editing. This again, though, comes down to which programs your using. Some programs use CUDA, others use OpenCL, which AMD is better with.
