Anything more than a good 750W is overkill for that...

Windows 7, or whatever flavour of Linux you like.

Aftermarket thermal paste isn't usually necessary, though an aftermarket cooler will run quieter, colder, and OC better.

You haven't really said what the system is for.

For sli 760's 750 or 800 watt will give you lots of headroom , 1600 watts is overkill to the max
save your money get a psu like this

it has 3x 6+2 pin pcie cables , 62A on the +12v rail , will run your cards and system fine , with the money you save
you could maybee get the more ram you wanted and perhaps a ssd

sli will be better for rendering , high speed ram ( greater bandwith ), the more ram the better
