if you are trying to game across both screens then you may have to lower some settings but 1080p will be fine.
If you are only gaming on one screen then you have nothing to worry about and you will play everything on high settings.
while gaming on one monitor the other monitor will work just fine.
personally I run three monitors with my main monitor being a 1440p monitor. just to keep all of the burden off of my GPU I use the integrated graphics off of the motherboard to power the other two monitors

If I understand correctly, eyefinity combines the two displays into one so far as a game is concerned.
A 1080P monitor has 1920 x 1080 or 2m pixels.
Two of them have 4m pixels for the graphics card to manage. That indeed doubles the load on the graphics card. If your card is a R9-290 you should perform well enough.
And... monitor size does not matter, it is the resolution that is important.
