is 32gb ram enough or should i go the full 64gb's of ram?

looking at my options at the moment and was wondering if 32gb ram is enough or if I should just go all the way and buy 4x16gb sticks of DDR3 1600 or DDR3 2133

and yes I use it all

ive had days where ive maxed out 128GB of ram on a VPS without trying too

and on my own rigs ive maxed 16gb of ram just doing everyday tasks that I find easy??

Not sure what you are doing, or why you are asking. If you've maxed out 128GBs of ram, then you need all the ram you can get. I'd go for as much as you can get, or find a way to use less. Or both.

probs both I do hardcore video editing and rendering a lot of the time and I also edit a lot of dvd's on the hard drive at the same time and have a ton of other stuff rendering while im editing the dvd's so I end up at the point where ill have 30+ projects rendering all fighting for limited ram and resources I currently run 1600 drr3 if I were to jump up too ddr3-2133 would that make a difference to the performance and usage ram wise? :)

I wouldn't go slow either. When you run out of ram, your system will start using the hdd. So even 128GB 1333 should be faster then 32GB 1600 IF you use more then 32GBs. If you were wrong and you really only use 24-30GBs 90% of the time, then 32GBs 1600 is a better idea. You seem to know what your usage is however so I'd get the ram amount the covers it. Fast as possible.

Your CPU is ok with that workload? I would think it might go faster if you limit the amount of work the CPU is doing.

i have a quad sli setup so i dont worry about the cpu to much the gpus are all cuda enabled so they take the load

The price difference between 1333mhz and 1600mhz shouldn't be too huge. I'd just go with highest attainable without paying more.
