Why use S/PDIF out from TV with a dedicated receiver

This official home theater connection guide from Sony recommends sending a HDMI out from the receiver to the TV for video and then a S/PDIF out from TV to the receiver for audio.

Why do we even need to pass any audio signals through the TV and back to the receiver when we could process them on the receiver and send the audio output directly to the home theater speakers and only video output to the TV?

I agree but we could work around that by simply muting the TV audio or plugging a dead S/PDIF connector into the TV's audio out instead of actually routing audio through the TV. S/PDIF can only carry stereo signal, so if we are feeding audio to the receiver via S/PDIF then we lose out the multi channel surround sound audio. Isn't it?
