DDR3 RAM: 8GB to 12GB?!

Heeeeeeey! Me again.
I have 8GB of the Corsair Vengeance 1600Mhrz RAM in my desktop (2x4GB's)
I do heavy gaming across three monitors using eyefinity. I also do photo editing and want to go into teaching my self video editing. Will a little RAM push up to 12GBs be a nice increase or shall I jump straight to 16GB? I know its alot of power. But I want to make sure I have more than what I need to I dont have any jumps, stutters or crashes if im running a billion things at once.

Hi. Go to 16 GB to maintain the Dual channel aspect.

I was thinking going for the Corsair XMS3 (2x2GB's)
Its 1600Mhrz, CL9, Timings; 9-9-9-24 just like my RAM.
Only £35. Easy to grab. I was thinking with the overall performance, I would love to splash £140 on 2x8GBs but having 24GBs is just freaking stupid.
Would 8GB too 12GB a nice jump? Using the 2x2GB kit to maintain the dual channel all at the same speed? Or?
