Upgrading my gaming rig for $500-$600

Being new to the whole SSD thing, I'm not sure if I should go with 2TB HDD and 120GB SSD, or 1TB HDD and 240GB SSD. Or if I should ditch them both for a GTX 750 TI.

i think i5 will be bottlenecked by your graphics card, so yes, you need a new graphics card.

An SSD is good for lower loading/boot times, but does not affect in game fps. The R9 270 is a better GPU compared to a 750ti.

If you have a backup for your original hard drive that will work fine, especially if it isn't full. I would go with the patriot ram as shown above and upgrade to the
xeon 1230v3 and a good h97 or b85 motherboard if you don't overclock.
or
i5-4xxx cheapest model and a good h81 motherboard if you want to keep under budget.
Also Razer has a good overclocking build.

maybe you can change i5 for an fx-6300 and a 990 mobo and then overclock it. with that you get it about 100$ cheaper and get 300$ graphics card.
