3x 1080p 60hz 8ms VS A single quality monitor 144hz etc.

First off, I have always had a 60hz monitor and don't know of any better. Always had a single monitor too so the triple monitor setup seems interesting to try. I have to decide in a few days. I have around 700€ to use and I've had the triple monitor set-up in my mind for quite a while and just now I noticed that they have a higher response time than my current monitor 5ms -> 8ms.

The difference is huge in terms of % but would this be THAT significant if I'm not into fast action games? The most fast action would be League of Legends but what I'm actually planning to do with the set-up is increasing immersion for games such as Skyrim. I don't play competitively or anything that has to do with very quick response time.

I assume this would make the 3x monitor set-up good for me, but if anyone has an opinion about this, please, I need it :) 

For reference, the "quality monitor" I was especially looking at is ROG Swift PG278Q. The 3x monitors are Dell U2414H. I will be having slight problems with holding 60 fps with all maxed out with a 780 Ti, but should handle with slightly lowered graphics.

You are comparing apples to oranges. You have to decide if you want 3 monitor gaming, or 120hz+ gaming with G-sync.

I personally would choose the ROG for G-sync and 120+ hz, but if you want to game on 3 monitors, you can only do that with 3 monitors.

:D  I have no idea what G-sync looks like although I have googled that feature.
Well, I haven't had problems with 60hz so I think three monitors it is.

I suppose having the ROG would be amazing for someone who has always had a 60hz 5ms monitor. But so seems the 3x monitor setup. Hard choice, hard choice indeed.

Also they aren't on sale yet. Since you would go with the ROG, do you suppose going with the ROG now and maybe in a year or so look for a triple monitor setup? Started thinking and the high refresh rate seems more exciting than burning GPU power on two side monitors that only provide more immersion. That monitor looks HUGE, your comment instantly changed my mind and now I'm thinking more of the ROG monitor than a triple monitor setup. I'll wait for more opinions before deciding and the ROG isn't available yet.
