which of the two RAM options?

1) Buy 8GB 1866mhz now and upgrade to 16+GB later ( my mobo supports up to 32GB at 3300mhz)
2) buy 16GB now and not upgrade

bearing in mind that 8GB only costs around £50 and 16GB can be as high as £130 for the same frequency, what should I do?

I'd go 2x8GB now, when you say 'upgrade' that usually indicates people are thinking of adding additional sticks which can be and often is problematic (even if you were to get the same exact model. The forums are full of folks that have tried 'adding' additional sticks and ran into problems, often this can be 'fixed' by adjusting voltages and/or timings but there's no guarantees this will work ;)
well noremally you want 2 stick so it runs in dual channel mode, and most mb's only allow overclocking ram to those frequencies when ram is in 2 of the slots, not all 4, so I'd get 2x8gb stick in a set. 16gb is enough unless you are rendering or something.
