I have an AMD A8 6660K with AMD Radeon HD 8570D integrated graphics (APU), I can crossfire a GPU to work with the APU. Which GPU's can crossfire with it, and which one is the best? Also would it work with an AMD Radeon R7 250 (Sapphire)?

No the R7 250 would not crossfire. But you shouldn't crossfire with such a crappy integrated video card. It would be better to simply buy a good video card and use that instead because it would still be better than two bad GPUs crossfire'd.

Completely agree, the A series APU doesn't seem to bottleneck good GPUs actually, so depending on your budget I would consider an AMD 270X or GTX 760 2GB

So the AMD Radeon R7 250 2GB DDR3 would be better than, say, a HD 6670 2GB DDR3 Crossfired with the APU?

It would be about equal. The crossfire may be slightly better. I don't suggest getting that card as it's quite terrible. You could double its performance for $20 more.
