Can I install single channel ram in a dual channel motherboard

I'm looking to build a new PC and I'm wanting a 4gb stick of ram but the motherboard is dual channel. Can I install the ram or do I need dual channel ram?

yep, DRAM doesn't care, each stick is an individual 64bit device, it's the the Memory controller that decides whether it runs in single, dual, tri or quad channel (of course helped by you and what slots you place the sticks in ;)  )

So using 1*8gb wont produce a noticable performance difference as opposed to 2*4gb in a dual channel setup?

A dual setup can provide up to about a 10-15% performance increase, so it's preferable
