I hear all this talk and extreme hype about how much Vram you will need soon because of all these next gen games being released this year, and so on. For a single 1080p, 120hz display, would 3gb of Vram be enough? I have a 4960x processor and 780ti. I just know newer titles are starting to use more textures and what not, but for a single 1080p monitor, 3gb of Vram should handle well for the next couple of years, right? Maybe even longer? I do want to play at Ultra settings for all newer games that are going to be released.

Yep, 3GB of Vram is more than fine.

2GB is enough for 1080P right now, but with future games on the way 3GB is good just in case they do use more than 2GB of vram.

Yes, 3GB is enough for a single 1080p monitor.
