All you have to do is pull out the sata and power cable from the old hdd, unscrew it from the mounting bay, put the new one in and connect the two cables back
No, you don't need to. You only need to hook up the new HDD. Be sure you turn of the computer before doing so and follow safety procedures. Take out the power cord from the wall and drain the PSU by holding down the power button and etc.

So all I need to do is replace 3 wires not including graphics card
