I'm hoping to make my purchase by around November or December (black friday, cyber monday, christmas specials). I'm hoping not to spend more than 500 dollars, that being the absolute most I would want to spend on one (before rebates).

I would purchase it for gaming (Titanfall, Skyrim [all ender scrolls games], and miscellaneous java based games. I want to also record and edit videos using Sony Vegas 7 and above. Watching movies, office works, some CAD work as well. Just want to future proof it for a long time.

I currently have a GTX 660, I'm out of the country and my memory isn't reminding me but I do have a 500W power supply. But I will be purchasing a
EVGA SuperNOVA 850W modular.

I have an i5 3570, generic Asus motherboard, 8gb ram (looking to add another 8gb)

I prefer Newegg.com simply because I haven't had any problems with them with all of my parts and upgrades. But I am open to any other website. Origin: USA.

I have no particular parts preference

I more than likely won't overclock, but definitely no SLI or crossfire

MONITOR RESOLUTION: 1920x1080

ADDITIONAL COMMENTS: future proof, and does a 3gb card or 2gb card have a substantial difference?

Solution
Your choice. It is fairly hard to damage graphics cards as long as you take good care of them, but it is still safer to buy new. For your second question: get a 3GB 780, it is a powerful card that is meant for above 1080p resolution and at 1440p and above the 2GB VRAM will cause a bottleneck.
