750w sounds like quite a bit. What are your full specs? Graphics cards are typically large power drawers but each of your CPUs should draw at most 100w each.

Which Xeon CPUs (model #), Graphics card, etc. HDDs and ram don't consume too much power, 100w set aside for them is probably overkill.

My guess would be a 500w power supply would be more than enough, may want to consider something gold rated for saving money on the energy bill.

This one is much better than the corsair cx series:

Power Supply: EVGA 750W 80+ Gold Certified Fully-Modular ATX Power Supply ($79.99 @ Newegg)

The Cx uses cheap chinese capacitors, I wouldn't trust them with anything important or high power usage. For Corsair branded PSUs stick to the AX/HX/TX series and stay away from the RM/VS/CX series.

Gold rated power supplies will save you money on your electric bill especially since this is a server and the EVGA linked comes with a 10 yr warranty (w/ online registration).

As far as I am aware, the cx are still using the Capxon Caps and I doubt corsair will change that since they sell plenty of units as is. I doubt they would change out a cheap component for a more expensive one when it isn't effecting their bottom line.
