Sell my GTX 780 SC w/ ACX Cooler to buy a SAPPHIRE TRI-X R9 290X 4GB OC

Personally, I'd just keep the EVGA GTX 780 SC. It's an amazing GPU. And I doubt the difference in performance will be noticeable. On paper, the GTX 780 is on the same level with the R9 290X.

the thing is everywhere i've looked they tell me the r9 290x is way better :/

It is faster, but not enough at 1080p to switch to in my opinion. If you can seel your card at a very good price, maybe.
Your call, if you plan to play higher than 1080p then you would see more improvement.
 
Find your parts in used condition on ebay.
Then filter on completed auctions,
In green you will see what the part actually sold for.

But... be careful what you wish for.
A R9-290X is in the same performance tier on Tom's hierarchy chart.
The difference between 3gb and 4gb vram is not meaningful:

Meaning that you can't tell any difference in performance without a synthetic benchmark.
The R9 cards seem to be noisier, more power hyngry and less satisfying.
On newegg, your card has a 2% unfavorable rating, the most popular R9-290X is 24% unfavorable for whatever reason.
And... they are more prone to failure
